Chicken Tortilla Soup
from Karin (Karen's hairdresser)
2 chicken breasts, cut into pieces
1/2 jar salsa (I like the corn and black bean salsa)
1 can corn
1 can of black beans or kidney beans
1 32 oz box of chicken broth (low sodium)
toppings:
shredded cheese
sour cream
tortilla chips
Brown the chicken in a stock pot with some salt, pepper and garlic powder. Add the salsa, corn and blackbeans, stir then add the chicken broth. Let simmer for about 1 hour. Spoon into bowls and add the cheese, sour cream and crush the chips on top.
The story behind the recipe: Karin says of this soup, "It's really easy and super yummy. I got it from a friend at work." I have yet to meet a bad bowl of tortilla soup. Thanks Karin ~Karen
